Eating good food!

This stuff is sooooo good!  And, it’s really easy to make!  All you need are some boneless/skinless chicken thighs, some spices, a couple of sauces and some onions and peppers!  Let’s get started!
Ingredients:  1 1/2 lb. boneless/skinless chicken thighs [fresh local, free range, organic, if at all possible], trimmed and cut into bite size pieces
2 tbs. Olive Oil
Cavender’s All purpose Greek Seasoning
Salt and Pepper to taste
Lea&Perrins Worcestershire Sauce [the bomb!!!]
Sweet Soy Sauce [I prefer Sushi Chef brand]
2 Medium Size Bell Peppers, seeded and cut into bite size pieces
2 or 3 small yellow onions, peeled and thinly sliced
Water and All purpose Flour
Recipe:  Heat the olive oil in a large skillet, or wok and then add the chicken pieces
Season the chicken with salt, pepper and Cavender’s to your liking [you can always taste it and add more towards the end]
Toss in the onions and peppers and saute’ until softened
Add the soy sauce [about a cup] and Lea&Perrins [about 3 or 4 tbs.] stirring and cooking for several minutes
Add about 3 tbs. of flour  and some water to make a gravy
Cook and stir on medium heat for about 15 to 20 minutes…adding water to thin or flour to thicken to your liking
Serve over rice or pasta and enjoy!!
bon appetit!
But, if you live around Asheville and don't feel like cooking, let me suggest eating a place called the "Cinnamon Kitchen" --- best Indian Food I've ever had and they have a lunch buffet every single day from 11am until 3pm --- food is amazing!
I hope everyone had an awesome Summer!  We only have 1 more week until Autumn!!  I'm ready!

Sneaux, Sleds and Snakes...in that order!

We've been getting some much welcomed sneaux around here!  And, the weather people are predicting another eight [plus] inches tonight!  Brrrrrrrrr.  Being from Louisiana, I have never had an opportunity to fly through the snow on a sled...not that I've ever thought I'd been missing out, or anything, it's just something I never did...but, then again, we never really had any substantial snow accumulation in Louisiana.  So a few months back, Wayne and I were poking around an antique warehouse in Asheville and Wayne came across this sled:
He was so excited!  He said "that's the same sled I had when I was a kid"...of course, he grew up in Boston, so he had plenty of opportunities to fly through the snow.  And yesterday, before the plow showed up to clear our road, we took a spin [or a slide, actually] down the hill --- this was my view:
So much fun!  Who knew?  And maybe we can do it all over again tomorrow!  Life is good :)
And I am in love with this gorgeous little necklace I made today...I named it "Snake Charmer" --- it's for sale in my Etsy shop, if you want to take a closer look!

Well, the sneaux has started to fall, so I guess that means it's time to open the wine!  Stay safe and warm!

Freezing Cold, Ice and a "Free" Pair of Earrings!

I'm really ready for Spring!  But there are some "good" things about being stuck inside in the cold...we actually cleaned the oven and the stove top today!  And I was on a roll making some new things and filling orders.  Slowly, but surely, the ice is starting to melt!  Yay!
I'm really in love with these!  I call them "Rustic Bling"...I love the contrast of the rustic brass circles with the beautifully faceted glass...they are gorgeous!
And I'm giving a pair of these adorable "Juniper Berry" earrings away!  All you have to do is comment on this blog post, or the facebook link.  I'll randomly pick a winner in the morning!  Good luck!
And this is another pair of cute little "Purple Daggers" that I made yesterday!  I'm loving the Spring colors!
And I'm hoping it will start warming up, so I can get back down in the basement to make some more little "encaustic journals" --- I love the smell of the melting Bee's wax.....mmmmmmmmmm
And I couldn't resist sharing this photo of Frankie!  Hope you are all staying safe, warm and dry!  Spring is on the way...I promise!

It's Winter --- I need to start writing again...

Brrrrr...it sure has been a cold week!  Everything is covered in a layer of ice --- including the tiny buds on our Dogwood Trees, since they had anticipated [along with me] and early Spring.  Instead, we woke up to snow flurries this morning:
But, instead of locking myself behind the doors and watching from the windows, fixing another pot of coffee and adding another layer of clothing to my growing bundled body, I ventured out and tried my macro lens on some fresh falling snowflakes!  It may not be the best photo, but it's my very first capture of a real snowflake.  It's hard to believe that each and every one of them are different and unique...just like us.
But, I guess the good thing about a prolonged Winter is the excuse to have comfort food every night for dinner!  Like this yummy Shepherd's Pie I'll be making tonight...along with a big pot of sauteed Kale.  My mouth is watering already!
Hope you are all staying safe and warm!

Conversation Starter...

This is my 3rd journal drawing, using theme prompts from a journal group I joined.  The theme for this week was "conversation starter" --- I certainly think butterfly wings and a Hen hat would be enough to start a conversation...how about you!
And another conversation starter are these beautiful little White Squirrels that Brevard, NC is famous for.  This little guy was on a tree in my neighborhood --- they are so cute!  I just love them!
I've been on a roll making "minimalist" jewelry --- I just love this Black Onyx necklace!  A great conversation starter, for sure!  Check out the other minimalist jewelry in my Etsy Shop!

Off to make some Valentine's Day goodies!  Stay tuned for a coupon code...coming up next week!

Have a wonderful weekend!

Happy New Year!

Hope 2015 is off to a great start for you!
I decided to make some "realistic" resolutions this year!
1.  Draw more [latest journal drawing]
2.  Become a better cook [Curried chicken coconut noodle soup - to die for!]
3.  Get out in nature more [yesterday at Wintergreen Falls in Dupont State Forest]
4.  Stop sweating the small stuff, and make more jewelry this year for my Etsy shop!

And, hopefully, blog more often!
Happy New Year!  Hope it's awesome!

love and peace always ~ Kathy
